RARE FIRST EDITION of what appears to be the second gastronomic work by Brillat-Savarin's nephew after the reference work, The Table in the land of Brillat-Savarin published in 1892.

This booklet, probably printed by Protat in Mâcon, deals with : "good butter making [who] requires care that not everyone can afford, and presents insurmountable difficulties for those who are not convinced that nothing can be achieved without the arduous efforts of relentless work."It is divided into five chapters, cows, the dairy, utensils, skimming, churning and mixing; and concludes with a scathing paragraph about the state: "But the taxman is insatiable: the more you give him, the less he is satisfied. No product or foodstuff enters our noses or stomachs without having paid the entrance fee: tobacco, wine, bread, meat, butter, etc., and I can see the time when one of these Ribot types will think up a way of balancing the budget, which will never be balanced, by also charging for victuals as they leave, so that it will cost as much to empty as it does to fill up.
