Some thirty pages of general considerations are followed by Method for obtaining a highly coloured red wine, Preparing Sweet Wines, Preparing the Vin Cuit and Caring for wines in barrels.

A pharmacist and chemist, Jean-Joseph-Étienne Poutet (1779 - 1858) was a member of numerous societies, including the Académie and the Société Royale de Marseille, the Société de Statistique, the Académie Royale de Médecine and the Société de Pharmacie de Paris. He was also the author of A treatise on the art of perfecting grape syrup and sugar (1811), the Instruction for recognising the adulteration of olive oil by seed oil (1819), the New sugar refiner's manual (1826) and co-author with La Platrière of L'Encyclopédie méthodique - Manufacture and Arts (1828).

The only surviving copy is in the Bibliothèque Nationale de France and does not include a mailing.

Chemist member of the Academy of Marseille, correspondent of the Medical Academy of Paris and of several learned societies.
